I am like any other pinterest junkie, I'll spend hours getting lost in different categories, but the toughest one of all is the "Food & Drink" section. Luckily I found something that looked & sounded amazing and I was easily able to convert it into something Weight Watchers friendly. (Original Recipe can be found on bsugarmama.com)
Weight Watchers- Jalapeno Popper Chicken Breasts
Ingredients (ONE SERVING): 5PP
3oz -Boneless Chicken Breast --3pp
1 wedge- Laughing Cow Cheese in Garlic & Herb --1pp
1/4th cup- Fat Free Shredded Cheese -- 1pp
1/2-1 Tbs- Chopped Jalapenos -- 0pp
Salt & Pepper to taste -- 0pp
Instructions:
1. Preheat oven to 350 degrees
2. Make slit in the middle of your chicken breast, deep enough to fill with jalapeno mixture but don't cut completely through the breast

4. Mix laughing cow wedge, shredded cheese, & jalapenos. (leave a tiny bit of shredded cheese to sprinkle on top of chicken in the final phase of cooking)
5. Load your chicken breast with jalapeno mixture. Use toothpicks or butchers twine to secure shut.
7. Place in cooking dish, sprinkle top with remaining shredded cheese, place in preheated oven for 20-25 minutes.
